Prik Glua, A Thai Sweet, Salty and Spicy Chili Fruit Dip
Prik Glua is a very portable, sweet salty and spicy treat. It's great for snacks or roadtrips. I am from Norman, Oklahoma, which was a very white city when I was growing up. My first experience with Southeast Asian culture was from a Laotian classmate. We went on a road trip and his family pulled out some exotic fruits. I had never had these fruits before and the mood was so festive. It was a fantastic discovery.
When I first went to Thailand to meet my wife's family in 2014 I had a similar experience. I was treated to another roadtrip and again the Thai fruits came out. What a treat. This is one of the reasons Thai food lends itself to being healthier. The lush tropical climate means there is an abundance of natural sweets to choose from.
Suggested Fruits To Use with Prik Glua
Typically people use guava, green mangoes or apples in Thailand. My wife is also a big fan of pickles and they actually taste good with this dip. Almost any fruit will taste good with this recipe though.
Did you know?
In Thailand they call guava Farang (sp?) which means foreigner. They call it that because it's white inside and most foreigners there are white people. I thought that was hilarious. There are several types of guava. I knew nothing about them before but wanted a way to eat them. You can review the types and facts at the wikipedia page here.
Suggested Serving of Prik Glua
When you are in Thailand you often find this sold in small plastic baggies with fruit. In America at an open market or festival you might find corn dogs. This is just as common in Thailand and much easier to make healthy. You can serve it in a plastic baggy with sliced fruit for road trips. You might also serve it on a plate at the pool as in the picture below.
Making It Healthier
Prik Glua is easy to make easier if you have the replacement ingredients. The origional recipe is only 3 ingredients, Salt, Sugar and Dried Thai Chili Flakes. I replaced stevia for the sugar, a salt replacement for salt and the dried chili flakes are healthy as is.
My Healthier Prik Glua Recipe
Ingredients:
- 3 tablespoons salt alternative such as
- 3 tablespoons of stevia
- 3 teaspoons of dried Thai chili flakes
- Whatever fruit you want
Instructions:
- Mix the ingredients
- Serve with sliced fruit
- Garnish with Thai peppers which can also be eaten with the dip
Making your own Dried Thai Chili Flakes
Here is Mod's recipe for dried Thai Chili in case you can't find it at the store.
- 3 tablespoons salt alternative such as

- 3 teaspoons of dried Thai chili flakes
- 1-2 sliced version of whatever fruit you want
- Mix the ingredients
- Serve with sliced fruit
- Garnish with Thai peppers which can also be eaten with the dip
