Garlic Pepper Pork Jerky/ Dried Meat

Garlic pepper pork jerky is something I came up with for an upcoming road trip.  Whenever I travel and we stop for a bathroom break I look for a very specific brand of beef jerky I love.  In Thailand, jerky is also very popular, and there are several recipes you can find for dried meats as they are called in Thailand.  You can’t buy them at gas stations as easily there because they are typically eaten with a meal, with rice, a dipping sauce and other dishes.

We actually did put this in a plastic bag for a road trip and it works just fine as a travel snack.   You can serve it with a sauce like shown in the picture with an over the counter premade sauce or with one of the many sauce recipes on this site which you can check out in the link here.

As always, you can vary the amount and type of ingredients you use.  We always go for the leanest cuts of meat and try to cut any fat away if there is any.  You can do this recipe with chicken or beef as well.  The garlic and pepper were from whole black pepper and garlic cloves and the cilantro stems are also natural unprocessed ingredients.  You will want to find a low sodium soy sauce and tamari if you are sensitive to gluten.  Those are the only ingredients, so with no further ado, here’s the recipe.

Ingredients:

  • 2 pounds of tenderloin pork
  • 10 garlic cloves
  • 1 tbsp whole black pepper
  • 2 tbsp of cilantro stems cut in very small pieces
  • 2 tbsp low sodium soy sauce

Instructions:

  1. Cut tenderloin into strips and then smash as thin as possible cut smaller if needed and then smash again to make them as flat and thin as possible.
  2. Blend the garlic, pepper, and cilantro in a blender or with a mortar and pestle.
  3. Marinate the meat with the above three ingredients and soy sauce in a large bowl, mixed well and marinated in a refrigerator for 45 minutes.
  4. Heat an oven to 450 degrees F.
  5. Place aluminum foil on a cookie sheet and lay the marinated meat on the foil spread evenly.
  6.  Cook for 30 minutes or more for a little crispier.
  7. Enjoy!
