Thai Style Spicy Lemongrass Sauce/Dressing is only a few ingredients but mind-blowingly delicious
This recipe is really easy and mostly natural, plant-based, ingredients except for the fish sauce. You can make your own fish sauce using the following recipe I found Here at NJkidney.org to decrease sodium content if you want. I'll post it as a separate recipe later.
Fish Sauce Substitute
Ingredients
2 teaspoon unseasoned rice wine vinegar
1 teaspoon toasted sesame oil
1 teaspoon molasses
½ teaspoon brown sugar
¼ teaspoon garlic powder
Sprinkle of red pepper flakes
¾ cup water
Optional Ingredients:
2 teaspoons plum jam or orange marmalade
Directions:
In a small sauce bowl, combine all ingredients with a whisk
until combined.
Nutrition: Serving size, 1 tablespoon, 10 calories, 1g carbo
Modifications
We adapted this recipe from a dressing we found in the book, Healthy Thai Cooking, by Sri Owen. It has some good recipes in it. Mod always pulls from her Northern Thai experience and has ideas to make things to her tastes and they are usually delicious. She added some Thai basil in this and we made a bigger serving size for two. It still wasn't enough though. This recipe is so good I could have a large keg of it and would use it all quickly. I wish there was a low sodium fish sauce available. I still haven't found one but found an article that states fish sauce is a better option for sodium, so there's that.
Ingredients:
- 1 and a half cups fish sauce
- juice of 5 limes
- 6 small Thai peppers chopped
- 9 scallions cut into small pieces at an angle
- 4 teaspoon chopped lemongrass
- 3 teaspoon stevia
- 6 tablespoon chopped Thai basil leaves
Instructions:
- Mix the ingredients and double or triple the ingredients if you want more.
- Pour this shit over anything to make it taste better. It's just that good.
Serve this over anything really. I dipped bread in it, we dipped pork chops in it, over shrimp, over a salad obviously or over just about anything it will add a spicy zest.
