Lobster Tail with a Spicy Lemongrass Dressing
Lobster tail with spicy lemongrass dressing Is a quick and easy way to get the flavors of Thailand in a healthy recipe. It is a good recipe for after a workout when you want little guilt. We had it with broccoli to reduce our carbs and it was the perfect way to do date night. It cost less than $10 for both small lobster tails but felt like a fancy date night out.
The dressing can be used for multiple recipes and we dipped some leftover meats in it after we finished our lobster. Here is the recipe, adapt it per your needs. My Thai wife adapted a few things from the book, Healthy Thai Cooking, to make it our own without changing the nuances that make it a Thai flavor.
Ingredients:
- 2 Small lobster tails
DRESSING
- 6 Tbsp. Fish sauce
- juice of 1 ½ limes
- 2 small Thai peppers chopped
- 3 scallions cut into small pieces at an angle
- 1 teaspoon chopped lemongrass
- ½ teaspoon stevia
- 2 tablespoon chopped Thai basil leaves
Instructions:
- Boil the thawed lobster tails for 5 minutes with a pinch of salt.
- Remove the lobster tail and when cool enough to handle cut down the middle with cooking scissors.
- Mix the dressing ingredients.
- Pour the dressing over the split tail and serve with the dressing for dipping.

This recipe is such a healthier way to do lobster than the traditional, American lobster and butter but is just as delicious. To make it in larger portions you can just increase the amount of dressing you make. You may also want to use this dressing for other things.
