Instructions

1. Set a pot with half an 8 oz box of coconut milk. 4 oz Lite coconut milk if you are trying to be healthier.
2. Add red curry paste and stir fry until fragrant.
3. Add meatballs and stir together, add 1 more box of coconut milk until the coconut milk boils.
5. Add Jinda red pepper and basil leaves. Season with fish sauce and sugar. Ready to serve with Khanom Jeen or if you don't like it, you can use brown rice instead. If you don't like spicy, you can reduce red curry paste as you like
4. Add water and wait for it to boil. Add the eggplant to cover the lid for 10 minutes. The eggplant is cooked.
