Noodle soup has always been my forever comfort food. I can eat this food every single day. Noodle soup is a thing in Thailand; there's noodle soup carts and stand everywhere. It's like we have McDonald's in every two miles in the U.S. Noodle soup in Thailand is a very affordable meal; it's like the McDonald's dollar menu which is quite different from what we have in the U.S.
Making noodle soup would be fun like we used to do when I was in Thailand with my family. I remember my dad would make a gigantic pot of the pork broth for us so that we can have the noodle soup all day long on the weekend. It was fun and convenient to have everything ready for us to make our own noodle whenever we wanted. That was a good memory, but to be honest, it is too much work and food for just my husband and me.
Easy & simple noodle soup
It could be hours to make the homemade noodle soup. It's time-consuming that I do not wish to do, so I come up with an easy noodle soup recipe. I mix low sodium chicken broth with water and season it with a soy sauce. EASY and SIMPLE as it.
To make it healthier, I choose brown rice vermicelli. I cook ground chicken in olive oil and seasoning soy sauce. For something more fun I add fish balls in my noodle soup. Hmm, yummy!! In the end, I flavor the noodle soup with chili flake, lime juice, and fish sauce. Oh la la, it's delish!
Noodle Soup with Ground Chicken Recipe
Ingredients:
- 8 oz. uncooked brown rice noodle
- ½ lb. ground chicken
- 1 lb fish ball
- 32 oz. low sodium chicken broth
- 4 cups water
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- ½ tablespoon seasoning sauce
- bean sprouts, basil leaves, fresh lime juice, chili flake or Thai pepper, and fish sauce for flavors
Instructions:
- Cook the brown rice noodle (follow the instruction on the box of the noodle that you purchase).
- Heat olive oil in a pan and add ground chicken into it, and add seasoning soy sauce. Keep stirring the chicken until it cooks.
- Add low sodium chicken broth and water in a medium pot and put it on high heat. When the broth mixture is boiling, put the fish balls in the soup. Bring the soup to boil then add soy sauce into the soup and turn the stove to low heat.
- Put the bean sprouts at the bottom of the bowl, follow with brown rice noodle, ground chicken, fish balls, basil leaves, and pour the broth over the noodle as much as you like. Season your noodle soup with lime juice, chili flake, and fish sauce. Enjoy!
