Dancing Brussel Sprouts with Fish Sauce, Watermelon and Bonito Flakes
There's this draftshop called Thistle near us in Spring, Texas that has fancy gourmet drinks and foods including dancing brussel sprouts they call, DANCIN’ BRUSSEL SPROUTS 8 on their menu. They are called dancing brussel sprouts because the steam makes the bonito flakes move like they are dancing. It is an amazing recipe and I order it almost every time I am there. I always ask for the recipe and they just tell me the ingredients so we have experimented at home.
We are in Texas, home of American square folk. That said, you have to realize that it has fish sauce. That is why I am including it on this blog, because fish sauce is so quintessentially southeast Asian. Recently, they switched the fruit to watermelon, which gives it a crisp cool contrast to the sizing hot sprouts. We love it! Here is what we came up with, adapt as needed to your needs, we always go as healthy as possible. Go check out Thistle if you are in the Houston area, it's top notch.
Ingredients:
- 2 pounds Brussel sprouts cut in half
- 1 cup rice vinegar
- 1 cup fish sauce
- 2 cups seedless watermelon cut in small rectangles or pomegranate seeds
- bonito flakes for garnish
- black sesame seeds for garnish
- 2 tablespoon olive or canola oil
Instructions:
- In a large wok, heat the oil on medium high.
- While the oil is heating mix together the fish sauce, vinegar and black sesame seeds in a bowl.
- Stir-fry the brussel sprouts until they start to blacken around the edges and then add the vinegar, fish sauce mixture.
- Continue to stir fry and reduce a little.
- Mix in the watermelon and serve hot, topped with a light sprinkling of the bonito flakes so that they dance.
