Boiled Jackfruit Seeds
Jackfruit seeds are a delicious nutty seed with a buttery texture. They are almost as good as the fruit itself and help you get more bang for your buck. Nutritionally, they have everything you want and very little bad stuff. They are high in fiber and have 7 grams of protein but less than a gram of fat. According to livestrong.com they also have a lot of vitamins and minerals. If you look at the size of this ginormous and fast growing tree you'd expect it's seed to be full of good high octane nutrients.
Getting the Seeds Out of The Fruit
We actually made a little party out of dismantling a large jackfruit. We documented the process in this video so you can see how we did it. Make sure to have some gloves or oil on your hands to keep the sticky stuff from getting your hands too sticky. Have a couple small bowls or a large one too. You can also watch this video to see. 🙂
Boiling the Seeds
Once you have all the seeds ready just throw them in boiling water. Add about a tsp. of salt or salt substitute. Boil for 30 minutes. Take them off the heat and let cool.
Preparing the Boiled Seeds
After the seeds have cooled enough, put them on a plate with a paper towel to dry. Once dry you can peel the seeds. This is probably the most work besides getting them out of the fruit. As with dissecting the fruit this is a good time to have friends and family help. Catch up on current events! Having something to keep your hands busy makes friends feel more comfortable anyways. I learned that from the android on the Chris Pratt and Jennifer Lawrence film, Passengers. I use it all the time now with my job.
Flavoring and Presentation
Once you have the seeds peeled they should be warm, soft and delicious. You can be eating them as you go with little guilt, I did. They are very buttery and savory but in my opinion they do taste better with a bit more flavor. I am a big fan of NoSalt. Blood pressure is the silent killer so I avoid extra salt. There is plenty of it in everything else anyways.
You might also put the seeds in the little pockets of fruit. The sections are hollow so you can pair them both for a snack that has protein, carbs and everything.
