Baked Chicken Legs with Buffalo Wild Wings Thai Curry Sauce
Chicken legs are not the healthiest option when you could go for chicken breasts and get more white meat. They are, however, my wife's choice so we can at least bake them to make them healthier. These are super easy to make and you can save money by making them at home.
These are a great snack for parties or football games or just because you love buffalo wild wings like us. You will have to buy it from one of their restaurants first of course. I promise I'm not getting paid or given anything for promoting their sauce. I just like them on this one.
Vegetable Sides
You might also want to pick up some celery carrots. In our case I also like snap peas. I do anyways, Mod wasn't as big a fan. You can just wash, slice up the carrots, celery into dipping sized pieces and set them out in a bowl.
Healthier Dressings
You can pick up a lite version of your favorite dressing too. See, not only do you save money but you have more healthy options. I think I have figured out how to make a similar sauce from scratch too. Stay tuned for that recipe.
Making the Chicken Legs
Ingredients:
- 12 medium chicken drumsticks
- 2 cups of Buffalo Wild Wings Thai Curry Sauce
- 2-4 cups ea. sliced carrots, celery and or snap peas
Instructions:
- Heat an oven to 400 degrees
- Oil a cookie sheet and place the drumsticks on it
- Cook until the inside of the chicken is 180 degrees
- Place the sauce in a bowl and roll the drumsticks in the bowl
- Serve with the vegetables and dressing and LOTS of napkins

It took longer than we thought it would before the chicken got the 180 degrees recommended for safety. This may be a recipe you want to plan ahead for. It's easy but just takes time so I personally like to multi-task.
When Mod tasted them she thought it tasted more like an Indian curry. I happened to be thinking the same thing. I think I know how to replicate it, I have a new recipe brewing in my mind. If you have ideas for how to do it better I want to know your thoughts as well pretty please. 🙂
