Stir Fried Ginger Chicken with Brown Rice Ramen
Stir fried ginger is a typical dish you can find in the market or schools, colleges, hospitals cafeteria in Thailand. It's been quite some time since I've have this dish. I miss it; I miss the savory flavor and the fragrant from ginger and it is super easy to make just like the other stir fried recipes. First, I thought I was going to make this recipe and serve it with steamed brown rice, typical in Thai cuisine. But, hold that thought, my creative husband throws the idea of using brown rice ramen that we both enjoy. This is how it works in this household. My husband is a brain and I am a body that makes the idea happens (I think!).
Let's make the Stir Fried Ginger Chicken with Brown Rice Ramen
I promise you this dish is one of the easiest recipes I've posted for you guys. It requires only 9 simple ingredients. You may wonder where you can find the brown rice ramen. I did some research and found that Whole Foods and Costco carry this type of noodles, but I order mine from Amazon. It is an organic brown rice ramen by Explorer Cuisine. One thing that excites me about this brown rice ramen is not it's an organic noodles but they use the whole grain brown rice from the farmer in Northern Thailand with his photo on the noodles package. My homeland is still setting new trends!
What do we need for this dish?
The 9 ingredients are chicken breasts, sweet onion, unseeded jalapeno, fresh ginger strips, chopped garlic, brown rice ramen, soy sauce, and oyster sauce. You can start with cooking the brown rice noodles according to the instruction on the package. Then slice the chicken breasts, thin-sliced sweet onion, unseeded the jalapeno using a spoon to scoop the seeds out then thin-sliced them. Using a spoon to peel the ginger skin out, slice the ginger into pieces then cut them into strips. After you get everything ready then it's time for stir fry. Trust me the food will come out amazingly good. 🙂
Ingredients:
- 4 nests of uncooked brown rice noodles, about 8 0z.
- 1 lb. sliced chicken breast
- 1 lb. thin sliced sweet onion
- 5 unseeded and thin sliced jalapeno
- ½ cup fresh ginger strips
- 5 garlic cloves crushed and chopped
- 2 tablespoon olive oil
- 2 tablespoon soy sauce
- 1 tablespoon oyster sauce
Instructions:
- Heat olive oil in a wok on high heat.
- Cook the garlic until it's golden brown then add chicken breast stir fry them until they are no longer in pink color.
- Add sweet onion, jalapeno, and ginger and stir fry them until the onion is in transparent color.
- Add brown rice ramen, soy sauce, and oyster sauce and stir fry all the ingredients together for a few minutes then turn the stove off and voila your meal is ready.
