Stir-fried Chicken, Mushrooms and Whole-Grain Brown Rice Vermicelli
Stir-fried Chicken, Mushrooms and Whole-Grain Brown Rice Vermicelli is a sizzling way to create a date night, sophisticated feeling dish. I found the vermicelli to be a little challenging due to the fragile and thin nature of the noodles. You have to make sure to focus when making this dish but the rewards are well worth it. We found it easy to make it too salty, so as usual, we rehabbed it a little to make it a healthier.
While Thai food is not inherently one of the healthiest cuisines as a lot of people think, it does have a lot of whole food ingredients, and dishes that are superior if you know what to look for. Whole-grain, brown rice vermicelli is one of those pleasant surprises I learned about from my wife. As you probably know, the more processed foods are the more complications they tend to bring. Vermicelli is not inherently healthy, I made that mistake by ordering it at a pho restaurant. I asked the waitress to see the packaging for the noodles and found out that they were refined grain.
Where to find the noodles whole-grain vermicelli

Instant Whole Grain Rice Vermicelli
I used these, Mama brand, noodles. This is not an affiliate post, so no we are not getting paid by Amazon or Mama foods. The noodles themselves are pretty easy to prepare and you can just leave out some of the sauces if you want to decrease the sodium and processed food content. I bought our noodles at the local Asian market you but you can find them on Amazon if you don't mind making Jeff Bezos richer and putting hundreds of other small businesses out of business lol. Maybe my perception is off but I am over that guy soaking up all the profits in the world while the needs of the many suffer.
Adjustments you can make
You can increase the number of noodles you use by one more dry block. You just boil them per the instructions and then rinse them in a sieve in cold water before stir-frying them with the other ingredients. The picture was made using only one block of noodles, it would have been more noodles if we used two and it wouldn't have been too much in my opinion. As I stated earlier you can also leave out the other sauces and spices as desired or add Thai peppers to add spice.

She could have gone healthier in her recipes, so we just take inspiration from most of them. I recommend buying the book though for good ideas. We're working on oa similar book as of this writing so make sure to check back for updates. Without further ado, here is the recipe.
Ingredients:
- 1-2 blocks of dry whole-grain vermicelli noodles (made with beans or whole grain rice).
- 2 tbsps canola oil or other monounsaturated fatty oil
- 4 shallots or one onion finely chopped
- 2 tbsps minced garlic
- 1 tablespoon minced ginger
- 1-2 cups chopped or sliced mushrooms
- 1 tablespoon fish sauce
- 1 tablespoon low sodium soy sauce
- 1 tablespoon yellow bean paste
- 1 teaspoon pepper
- A dash of stevia
- 4 tablespoon water, lite coconut water, vegetable or low sodium chicken stock
- 2 large chicken breasts finely chopped so it cooks fast
- Chopped scallions, cilantro and or Thai basil for garnish
- Lime wedges for garnish
Instructions:
- Boil the vermicelli until well cooked.
- Drain in a sieve or colander and rinse in cold water.
- If you can pull these noodles apart after rinsing as with egg noodles more power too you, I just threw them in as-is. They're really thin.
- In a large wok or skillet, stir-fry the garlic, onions, and ginger on medium-high until fragrant, a few minutes.
- Add fish sauce, soy sauce, bean paste and a dash of stevia if you like a little sweetness and stir in.
- Add in the water, coconut, vegetable or low sodium chicken stock and stir in.
- Stir fry continually, making sure to mix evenly and not allow it to burn.
- Add in the chicken and stir-fry in until cooked through, continuing to stir-fry so as not to burn it.
- Serve Garnished with chopped scallions, cilantro and or basil and with limes squeezed over the top.
