Sriracha Rotisserie Chicken Salad
Sriracha rotisserie chicken salad is a copycat of the store bought premade chicken salads. When we go shopping I am always tempted by the $7 little pint-sized containers of chicken salad. I bought one once and ate it in about 2 minutes. The good news, I guess, is that it is as delicious as it looks. The bad news is $7 and still hungry? It was barely an appetizer. I decided to make it on my own and it's a much better value.
Making it Cheaper
Here in Houston, where we live, you can go to Kroger after 10 PM and usually buy the days rotisserie chickens at a discount. I think this is what the stores are doing anyway when they don't sell their chickens. It isn't too hard and you can keep that extra money for yourself.
Ingredients:
2 cups shredded rotisserie chicken
½ cup thinly sliced celery
½ chopped carrot
½ cup cranberries
½ cup chopped pecan
½ cup olive oil mayo
¼ cup light sour cream
¼ cup Sriracha
¼ ground stone mustard
Instructions:
- Shred a rotisserie chicken by simply pulling it apart with a couple forks and your hands.
- Combine the chicken with the other ingredients in a large salad bowl and mix until completely mixed.
- Serve by itself or on a sandwich or wrap.
