7 Ingredient Thai Chopped Chicken Salad
My wife and I are super busy. We try to work out every day, work full time and are trying to further our career. This means simplifying everything we can. This Thai style chopped chicken salad takes a delicious salad and simplifies the ingredients.
Simplifying Thai Chopped Chicken Salad
Thai style chopped chicken salad is one of my favorite all time salads. I have posted a more complicated version on this site earlier. This recipe is slightly different. As the foodie world continues to be quickly disrupted by new innovations things get easier. Pre-made slaw mixes are relatively inexpensive and available at almost every market now.
Online and Asian markets are also more common now. Hard to find ingredients like green papaya are more available. If you can find an Asian market near you you have it made. Otherwise you may have to spend a bit more for the green papaya or just leave it out. Markets usually only carry yellow papaya. In the spirit of simplicity I will get right to the recipe.
Ingredients:
- 2 ½ cups of slaw mix minus the dressing. (chopped carrots and cabbage in equal parts basically if your market doesn’t have the pre-made kind)
- 1 ½ cup shredded green papaya
- ½ cup chopped green onions
- ½ cup crushed peanuts- You can put peanuts in a Ziploc back and crush them with a bowl
- ½ cup cilantro
- 1 bottle light Asian ginger salad dressing or use one of our dressing recipes by using the search box from the home screen
- 1 pound chicken breast tenders
Instructions:
- Toss the salad including all the ingredients except the chicken.
- Grill the chicken tenders and pull apart into bite sized pieces with a fork.
- Place the chicken on the salad while it's still hot or toss it into the salad hot.
- Serve
