3 Ingredient Thai Sweet Chili Cucumber Chicken
When you're living a rushed life with limited time, you wish you could do everything fast like snapping your fingers. I have a nice and clean recipe to share with you guys. It's 3 Ingredient Thai Sweet Chili Cucumber Chicken. The recipe requires only three ingredients just like its name; Thai sweet chili sauce (most of the American grocery stores have it in the Asian section), cucumber, and chicken breast.
We're trying to maintain our workout routine as much as we can after we're done with work. Most of the time we're so starving after it all. We always need something fast to make and not too heavy before the workout, and this sweet chili cucumber chicken is something that is just right for us.
Adam found the inspiration for this recipe from 4ingredients.com. I don't like the crispy noodles that they put on top so we made it a 3 ingredient recipe. First, it's not necessary, and second, it's deep fried. I skipped the noodles. Even though I am a noodle junkie, but crispy deep fried noodles are not my kind of carbs.
Additionally we will do a healthier version of the sweet chili sauce you can use later so stay tuned. For now we just used the first Thai sweet chili sauce we could find.
About the Recipe
We cooked the chicken breast on a George Foreman grill until the chicken temperature was about 140 Fahrenheit degrees. If you don't feel comfortable with this number you can go to 165 Fahrenheit instead following to the FDA recommendation. I cut and checked on my chicken, it was white opaque without any pink color on it, and the juice also came out clear.
Here's the recipe!
- 1 chicken breast
- 1 cucumber
- Thai sweet chili sauce to taste
- Cook the chicken breast by grilling it about 8 minutes or until it reaches the cooked temperature (mine was 140 Fahrenheit degrees).
- Shred the whole cucumber but not include the seeds.
- Put the shredded cucumber at the bottom of a bowl.
- Slice the chicken breast and put it on the shredded cucumber.
- Lastly, top it with the Thai sweet chili. ENJOY!
