Spicy Pandan Leaf Chicken Wings
Spicy Pandan Chicken Wings is a delish dish I came up with to fill our home with the wonderful aromatic flavor of Pandan Leaves and fill our stomach with good food.
Pandan Leaves
For most of you who don't know what Pandan leaf is, it is a native Southeast Asia plant that looks more like a palm tree.
In Thai cuisine, we use it in both savory and sweet dishes to enhance the fragrance of the dish. Pandan leaf has a very unique scent; it is sweet, cool, and freshening. Some people leave it around their homes as an air freshener.

To make Spicy Pandan Leaf Chicken Wings
Making Spicy Pandan Leaf Chicken Wing is very simple and easy. It requires only 10 ingredients which most of them are very easy to find from any grocery store. One thing that would be a challenge is to find a Pandan leaf. We're currently living in the north of Houston, TX and we randomly find the Pandan leaf in the Asian grocery stores, almost a year-round.
This recipe is one of our flavorful baked chicken wings. All you have to do is marinate the wings with the other ingredients and leave them in a fridge overnight and bake them the next day. But don't be afraid to get your hands dirty for this recipe. First of all, you need to use your hands to crush the Pandan leaf with other ingredients then you're going to mix the chicken wing with marinade sauce. You're going to kind of massage the chicken with the sauce and Pandan leaf in order to allow the sauce soaks into the wings
Ingredients:
- 5 lbs whole chicken wings
- 5 pandan leaf, cut them about 2-3 inches long
- 1 bulk crushed garlic
- ¼ cup olive oil
- ¼ cup fish sauce
- 3 tablespoon lite brown sugar,
- 2 tablespoon light soy sauce
- 2 teaspoon turmeric powder
- 1 teaspoon curry powder

Instructions:
- In a big mixing bowl, add crushed garlic, cut Pandan leaf, olive oil, fish sauce, lite brown sugar, light soy sauce, turmeric powder, curry powder, chili powder. Mix the ingredient together. Using your hand to crush the Pandan leaf to let its aroma out.
- Massaging the chicken wings with the sauce and Pandan leaf piece by piece. Put them in a large bowl, cover it and leave in the fridge at least 2 hours or overnight for a better result.
- Heat the oven on bake at 450 Fahrenheit degrees and cook the wing for 40 minutes.
- Serve the wings as the appetizer or serve it with a side of steamed brown rice or red ruby rice, fresh vegetable or side of salad, and maybe with Thai sweet chili sauce.
