5 Minute, 5 Dollar Sautéed Thai Curry Scallops
Scallops are one of the recipe items I have been wanting to do for a while but couldn't bring myself to do because they are so expensive. I found a bag of scallops yesterday at Aldi for less than $5. I am not getting paid by them to do this, I just wanted to share something good. My friends know I am a cheapskate in a lot of ways. Cheapskates have 50% less divorce than the average couple so there's a lot of good going on here.
Nutritional Value of Scallops
Scallops are high in protein and low in fat. Each serving has 20 grams of protein, making them a great option for people who exercise and have higher protein demands. As with most shellfish, they are high in cholesterol so if you are worried about that you might want to avoid this one. Some people are also put off by the fact that they are filter feeders so there are valid concerns about that as well. On the bright side, filter feeders collect vitamins and minerals including calcium and a slew of vitamins that we need, so it's not all bad.
Cooking Indications
Scallops should not have a fishy odor if they are fresh and need to be cooked very quickly. They should be slightly translucent when raw and cooked only 3-4 minutes until opaque. Thai people usually don't use olive oil so you can use canola oil as a healthy alternative. I just love olive oil and it turned out well so I went that route.

My Recipe
Ingredients:
- 1 bag of bay scallops
- 1 tablespoon of Thai curry paste (I used yellow curry but choose your favorite)
- Olive oil or canola oil (just to coat the skillet)
Instructions:
- Heat a healthy oil at medium-high in a skillet or wok.
- Add the curry paste and stir-fry until fragrant.
- Add the scallops and stir-fry until opaque.
- Serve with vegetables.
