Thai Red Curry Breakfast Burrito
Breakfast burritos are one of my favorite morning treats. This one makes it feel gourmet and exotic. I really yearn for a breakfast burrito on weekend mornings. Any morning for that matter. But there is nothing better after an early morning workout when you are hungry. People are doing the weekend morning thing, are generally happy, and if your lucky one of the local stores does a good job at it. Unfortunately in Houston I have not been so lucky. I found a decent one at a gas station yesterday morning but that place is 30 minutes away. It's far cry from what I experienced living in Dallas with the Whole foods making them or in Santa Fe with Posa's whole grain burritos.
Your taste will probably differ from mine but I'll get you started with the basics to make anything a Thai red curry breakfast version.
First you'll need to make sure you have the following ingredients. For the red curry paste Mae Ploy makes a good one. I used almost 3 tablespoons and the spice level was great but a bit salty so you will want to decrease it. This unless you don't use the turkey sausage and turkey bacon I used. They already have salt so too much curry paste and it's too much. The site I linked to does a decent job breaking down the nutrition too. I used the one by Huy Fong, (They have a gorgeous website by the way. You should check it out.) For the other ingredients I used enough for about 10 servings. You will want the biggest possible whole grain tortillas you can find.
Ingredients:
- 1-2 tablespoons Thai red curry paste
- 1 tablespoon chili garlic paste
- 1 lb turkey bacon
- 1 lb cubed chicken breast
- ½ lb turkey sausage
- 1 package of small potatoes frozen, that can be placed in the oven
- 1 package of whole grain tortillas, as large as possible
- 3 tablespoons of a healthy oil like olive or canola oil
- Optionally: eggs, beans and cheese to top
Instructions:
- Heat the potatoes in the oven. I put some chili powder on top of them.
- Put the oil, curry paste and chili paste in a skillet and stir fry at medium high.
- Once it looks a darker read add the meats stirring often until they are cooked through.
- Turn the heat to low.
- Place the tortillas, beans, cheese, eggs and whatever else you and your peeps might like next to the skillet and loudly say, "COME AND GET IT WHILE IT'S HOT!" lol.
- Enjoy and comment below how you like your breakfast burrito. I'll probably do this again with different ingredients and types of Thai curry.
