Thai Green Curry Fish Instant Pot Recipe
Thai green curry fish is one of the easiest ways to make a healthy fish dish at home with minimal effort. Using an Instant Pot or rice cooker you can just put the ingredients in the pot and have a hot meal ready to go.

As of this writing we just got our instant pot and are still learning the ropes a little and this is the first recipe that really turned out decently. I have been looking at the way other blogs use their instant pot to do Thai recipes and they are just as complicated as using the wok. We played around with our instant pot a little bit and realized it really doesn't have to be that complicated to make a decent hot curry. We also chose precut ingredients at the store to make this as effortless as possible and show how easy it can be made to be.
I will keep this post really simple as the recipe should also be, considering it's supposed to be technology making life easier so here is the recipe.
Ingredients:
- 1.5 lb catfish fillet or any kind of white fish
- 2 cups baby carrots cut in half or quartered
- 1 medium squash, we used zucchini, cut it about 1.5 inches long and then quartered
- 1 red bell pepper, cut it half lengthwise and sliced it about 1-centimeter width
- 2 tablespoon green curry paste, store-bought or home-made if you want it to be healthier (we recommend our homemade recipe to decrease sodium and preservatives. see recipe below.)
- 1 tablespoon fish sauce
- 2 cans lite coconut milk
- 2 cups high-quality H2O (water)
Instructions:
- Simply combine and stir all the ingredients in the instant pot.
- Turn the top venting knob to the venting setting.
- Cook on the soup setting for one hour.
- Be careful when opening the instant pot not to get burned by the steam.
