Thai Banana Chocolate Peanut Butter Protein Banana Pancakes
Banana Pancakes are a comfort food that takes me back to happy weekend mornings with friends and family. There are many high protein pancake mixes that only require mixing in water and throwing on the skillet. If you're really lucky your beautiful wife wakes you up with some banana pancakes. If you still need more than that to get you in the spirit maybe the Banana Pancake song by Jack Johnson will get you in the spirit. His whole playlist actually goes great with cooking up some lazy weekend fare.
Thai Bananas
Bananas originate from south east Asia and there are 50 species in Thailand. Thai bananas are often also called lady fingers. Lady fingers are just one variety. You may get a different variety but chances are that it will be sweet and delicious if it is one of the smaller varieties.
Mod found the "Pumped up pancakes" protein pancake mix at nutrition and supplement store. The package advertises that its all natural and whole grain. It also has 20 grams of protein per serving. That's great if you are following the ACSM's recommendations for exercise and doing resistance training weekly. The link will take you to them on Amazon. There are actually a lot of companies producing protein pancake mixes if you search the keywords on Amazon.
What we added
So obviously we added some Thai bananas in the mix. Mod went with exactly what the package recommended and added 2 Thai bananas. It made enough for two pancakes each, the image above. We also went for the typical healthier ingredients we go for such as olive oil skillet spray, olive oil butter and a light syrup.
Kind of strangely, you can now also buy the Thai bananas on Amazon. Go for it, go bananas, apparently the tech world is! The instructions below are pretty much the same as the ones on the instructions with the above modifications. They are not paying us for this post or giving us anything, she just randomly found this mix.
Ingredients:
- 1 cup of Pumped Up protein pancake and waffle mix
- 2 Thai bananas, sliced into circles
- ⅔ cup of cold water
Instructions:
- Preheat the griddle to med/low heat (250-275 degrees F).
- Whisk 1 cup of the mix with ⅔ cup water and 2 sliced bananas.
- Let the batter sit for 2-3 minutes to thicken. Add water if you want to change the consistency.
- Pour batter into desired sized pancakes on the griddle greased with olive oil spray.
- Cook until bubbles break the surface and flip.
- Top with olive oil butter, 1 small Thai banana and lite syrup or honey.
