Stir-Fried King Mushrooms
King mushrooms, or also king oyster mushrooms or Pleurotus eryngii, are a semi-exotic way to bring something new to the table. They are impressive in size and have a wonderful consistency and shape similar to scallops. You can often find them at Asian markets around the world with the other mushrooms in produce. They are really easy to prepare and have tons of uses. The easiest use we came up with and that you will find at restaurants is just stir-frying them.
Nutritional Content
Mushrooms are mostly comprised of carbohydrates, about 60% with a really low glycemic index of 5. They are also about 30% protein and 9% fat according to Nutritiondata.self.com. They are a great way to get a substantial meal without too many calories and the piece of mind that you're eating whole foods. They're beautiful and have a lot of benefits beyond what I have room to post here.
Preparation
There are lots of ways to cut and prepare them. We chose to cut them like scallops, which is one of the most common uses of them. You just slice them horizontally and you will see why they are often called land scallops. When stir-fried they also have a savory consistency and soak up the flavors of the sauce well. As always you can use lower sodium sauces or make your own which is especially important if you have any special dietary needs. One consideration is that you make sure you are cooking them to at least 140 degrees F. as the broader category of oyster mushrooms have toxins that need to be heat-degraded according to this Huffington Post article.

Here is how Mod did it
Ingredients:
- 1 lb. King (Eryngii) mushroom, round sliced about ¼ inch thick
- 3 oz. green bean, ¼ inch long cut
- 3 oz. sweet red or yellow bell peppers, square cut
- 0.20 oz. Thai basil leaves
- 4-5 thin sliced garlic
- 1 tablespoon low sodium soy sauce
- 1 ½ tablespoon sambal oelek (chili garlic) sauce
- 2 tbsp. canola oil
- 1 tablespoon water
Instruction:
1. Heat oil in a wok at medium-high, add sliced garlic and cook until it turns to golden color.
2. Then add green beans and bell peppers and stir-fry them for a couple minutes.
3. Add King mushroom, follow with sambal oelek sauce, soy sauce, and a tablespoon of water. Stir-fry it for about five minutes or until the mushroom is soft and cooked.
Serve the food with steamed brown rice or quinoa, it will give 1-2 serving(s). You can also serve it as a side dish for 4 servings. 🙂
