Roasted Soy Ginger Garlic Pork Loin
Roasted soy ginger pork loin is an easy recipe you can do relatively inexpensively for a roast meat. You can usually find pork loin marked down to a low as $4 for 2. It makes quite a bit of food for the price and effort and everyone we fed with this recipe was happy with it.
The recipe is incredibly easy using the soy ginger marinade i bought from Whole Foods and some ginger cloves.
You just take the pork out of the package as is and poke holes in it with a knife or fork to allow the sauce to seep inside. Place in a baking pan and cover with the soy ginger sauce. You can also place the pork in a zip-lock bag or bowl soaking in the sauce but it was easier to just put it on the lightly oiled pan for me. Marinate in the fridge for 30 minutes to a day, covered.
Roasting the Meat
To roast the meat, just preheat the oven to 350 degrees and make sure you have oiled the pan. I added sliced ginger to the top which added a nice flavor to the meat but was a bit bitter when you ate the ginger itself. You can add garlic cloves with as much of the skin removed as possible now and then lightly cover the dish with olive or canola oil. Cover the meat loosely with foil. Roast for 1.5 to 2 hours or until the internal temperature of the meat is 145 degrees F.
Ingredients:
- 1-4 pork loins with the fat trimmed off if possible
- 1 bottle soy ginger sauce
- oil for the pan
- *optionally, garlic cloves
- *optionally, sliced ginger
Instructions:
- Poke holes in the meat and marinate in the soy ginger sauce for 30 minutes to overnight in the fridge.
- Cover in garlic cloves with skin removed and optionally sliced ginger and a light coating of oil.
- Heat the oven to 350 and roast on a lightly oiled pan for 1 hour 30 minutes to 2 hours or until the internal temperature is 145 F.
- Save the juices back and use them to baste the meat lightly for a decadently juicy presentation.
