Prik Khing Curry Burritos
Prik Khing Curry Burritos are a very fragrant and delicious way to wake up in the morning. For that matter, it is a good recipe to wake up your family because it smells so delicious. It is definitely a fusion recipe because it combines cheese and tortillas with Thai curry. I used some vegetarian sausage because my cholesterol is high and I am trying to eat more legumes. You can use whatever you want of the protein of course.
Getting the ingredients for the recipe
People have told me that prepping Thai food is the most intimidating part. It really doesn't need to be with the abundance of Asian markets, Amazon.com and similar online stores and the amount of creativity you can use for Thai recipes. This recipe could seem all the more intimidating because you just don't hear of Prik Khing Curry enough to know where the heck to get it or remember how to say it. You can use whatever vegetables you want and just make it how you want using the general guidelines below. 🙂 The video shows the ingredients I used to make mine but I think that is more just a suggestion. You could just use whatever greens you have in your fridge that taste good chopped up and put on a burrito. Sometimes leftovers from a restaurant even work and you use them before they go bad. You might use more cheese and onions than I did too. Use your judgment. This one turned out pretty good, I just want to make using Thai spices less intimidating.

Ingredients:
- 500 grams protein, I used 6 vegan sausages to meet that.
- Approximately 250 grams of chopped vegetables, green peppers, carrots, onions for example.
- 4 tablespoons canola or olive oil
- 1 cup cheese
- 5 tablespoons Prik Khing curry paste
- 8 egg whites, maybe 1 yolk, if you like to live dangerously
Instructions:
- Heat the oil at about medium high
- Put the curry paste and protein
- Add the cheese and eggs
- Add the vegetables and cook about 10 minutes stirring often
- Serve on a 100% whole grain tortilla
