Instant Pot Lemongrass Coconut Lime Chicken
Instant Pot Thai Lemongrass Coconut Lime Chicken is not something you will not likely find in a Thai restaurant. My wife, Mod said she only had lemongrass chicken in Thailand one time.
You can find it there in a bowl of coconut soup. I have not seen it that I can remember and we raised our voices as I interrogated her trying to find out if it was an actual Thai recipe. I also combed the internet and found some that had coconut milk and some that didn't. Whatever it is, it's completely delicious and healthy the way I made it.
My Adaptations
I guess I am a pretty visual guy because of the recipes I looked at with my searches I went with the one which grabbed me the most visually. It is this Vietnamese Lemongrass Chicken recipe, from plates and pairings. She is so good at aesthetics, her website, she and her food are all so gorgeous. What's funny is that she adapted it from this Vietnamese Lemongrass and Chili Chicken recipe.
I guess It's sort of like a rumor that has changed slightly from telling to telling but way more delicious than ugly. Thailand is between India and China anyways and my Thai wife married a white guy so I am just furthering the Thai tradition of new fusion recipes emerging from the rich jungle landscape of ingredients. I didn't include Thai in the title, I included more Thai ingredients and healthier ingredients though.
Ingredients:
- 2-3 chicken breasts cut into bite-sized pieces
- Marinade
- 1 lemongrass stalks cut into very small pieces transversely
- 2 tablespoons lite brown sugar
- 1-2 Thai peppers cut into very small pieces also transversely
- 3 tablespoons minced garlic
- 2 tablespoons fish sauce, lower sodium if you can find it
- 2 kaffir lime leaves finely sliced
- 1 tablespoon coconut oil or canola oil if you're worried about saturated fat
- 1 onion thinly sliced, whatever type you like
- ½ cup lite coconut milk
- 1 tablespoon lime juice
- Toppings
- 2 tablespoon Thai basil cut into tiny pieces
- 1Kaffir lime leaf sliced into slivers for a topping
- Zest of one lime or lemon or both for a topping
- 1-2 limes sliced in circles for a topping
- Whole grain rice to serve with it
Instructions:
- Poke holes in the chicken with a fork or sharp knife for the marinade.
- Combine the marinade ingredients in a bowl, mix and add the chicken.
- Marinate the chicken for at least 30 minutes if not overnight, in the refrigerator.
- Place the oil in the instant pot.
- Add the marinated chicken and marinade with the other ingredients in the instant pot.
- Close the vent and turn on the pressure cook setting.
- Once the Instant Pot beeps that it is done, be careful not to burn yourself when opening.
