Instant Pot Thai Whole Grain Coconut, Lemongrass, and Lime Rice
Instant Pot Thai Whole Grain Coconut Lime Rice has a couple of my favorite Thai ingredients and is surprisingly good. It has lime, coconut, and lemongrass which complement each other well and have a light flavor that I crave for breakfast for whatever reason. You can make it with any kind of whole grain rice and in an instant pot for speed. If you are really lazy you can just buy a microwave pouch version of this from World Market, which is where I got the idea to rehab this recipe.
Substitutions
This is not a recipe my Thai wife Mod typically makes so it was new for both of us and we both love it. I don't know why Tasty bites just used organic rice didn't go whole grain. My gut feeling is that whole grain matters a lot more than organic. I honestly don't know what else they used but would always prefer having control of what goes in so I used other recipes. If you want more information on choosing low glycemic, healthier rice I wrote this little post on choosing them. A brown or long grain will be fine though. Use brown jasmin if you want your house to smell extra good.
Not All Rices are Created Equally When it Comes to Health Value. How to Choose the Healthiest Rice
I went ahead and used coconut oil for the flavor but if you are concerned about saturated fats you may want to use canola oil instead. Here they are below, it's really pretty simple.
Ingredients:
- Zest from one lime
- 2 stalks lemongrass cut into small pieces
- 1 tablespoon lime juice, fresh is best
- 1 14 oz can lite coconut milk or similar size
- 1 tablespoon coconut oil
- 1 cup whole grain rice, I used brown rice but any long grain rice will do
- *Optionally 2-3 kaffir lime leaves cut into small pieces
- Garnish- Zest of another lime and or cilantro, lemongrass or Thai basil will all go nicely cut into small bits
Instructions:
- Close the vent on the instant pot.
- Add the coconut oil to the bottom of the instant pot.
- Add the rest of the ingredients.
- Seal the instant pot and hit the rice or multigrain button.
- Get ready for some fantastic smells and then tastes!
- Garnish per your desires, we used lime zest and it was the bomb!
