Instant Pot Thai Coconut Soup, Tom Kha
Instant Pot Thai Coconut Soup is a really quick and easy way to make the Thai classic soup. You can pretty much improvise with the ingredients you have as long as you have the core things that make the soup. We always go for a lower sodium soup than you would get at a store or a restaurant. Soups are generally pretty healthy except for the sodium. You can use whatever protein you want, tofu for example, if you are vegetarian. I'll keep this short and sweet and get right to the recipe for this post. I'm posting the main things you need for a Thai coconut soup and then you can add whatever vegetables you want.
Ingredients:
- 2 cans coconut milk, light version if possible
- 2 tablespoon lime juice
- 1 6 inch stalk of lemongrass pounded so the juices come out
- 1 tablespoon some healthy oil
- 1 tablespoon sliced ginger
- 1-2 cups protein, we used shredded chicken breast
- 1 tablespoon minced ginger
- 1 tablespoon sambal garlic chili paste
- 2 cups low sodium vegetable broth, I used a Thai version that had some lemongrass flavor in it.
- Thai basil, cilantro, Thai peppers or parsley for garnish
Instructions:
- First, add the oil to the bottom of the cup.
- Add the rest of the ingredients.
- Close the vent valve.
- Turn to pressure cook and wait until it switches from on to keep warm.
- You may want to use a towel to vent it as the steam is crazy hot. I burnt myself, be careful.
- Garnish as desired and serve hot!
