    I love and obsess over noodles and I also love soup.  This week my husband hasn't felt good with a lot of holiday parties wearing us down, so he asked me to make some comfort food for him.  Speaking of post-party comfort food, noodles soup is perfect with a little hint of fresh ginger to soothe his stomach.  I came up with ginger soba noodles soup.

    Soup is one of the food that fills with lots of nutrition and fewer calories if you compare it with the other methods of cooking. Steamed or boiled food may have fewer calories but you'll lose the nutrition of the food. Stir-frying and baking food is more likely to have more or equal calories with soup but it won't fill you up with the same amount of calories as the soup.

    Ginger soba noodles soup is a very easy recipe to make for everyone in your family (literally everyone). It's one of so many Thai dishes that are not spicy and your kids would like it too. This noodle soup only requires 10 ingredients which include; soba noodles, chicken breast, bok choy, shiitake mushrooms, fresh ginger, garlic, green onion, low sodium chicken broth, olive oil, low sodium soy sauce. Soba noodles are considered as healthy carbs with a low glycemic index number.  Shiitake mushrooms are considered as an Eastern medicine. It has properties that may lower cholesterol and block the digestive system to absorb the cholesterol, antioxidants, lots of minerals and fibers. Fresh ginger helps to soothe the stomach and build the immune system.

    This ginger soba noodles soup is a savory food that we enjoy so much. We both slurp every bit in our bowls and finish everything off. My husband enjoys his soup without adding anything to it. I love and am addicted to spicy savory food so I add some homemade chili powder, fish sauce, and lime juice in my bowl and it tastes so good!  Alright, Let's make the soup!!

    Ginger Soba Noodles Soup

    Ingredients:

    • 8 oz. cooked soba noodles
    • 12 oz. sliced chicken breast
    • 16 oz. baby bok choy or bok choy
    • 8 oz. sliced shiitake mushroom
    • 64 oz. low sodium chicken broth
    • 5 minced garlic cloves
    • 2 tablespoon minced fresh ginger
    • 4 tablespoon chopped green onion
    • 2 tablespoon olive oil
    • 3 tablespoon low sodium soy sauce

    Instruction:

    1. Heat olive oil in a large wok then add ginger and garlic.
    2. Stir fry until the ginger and garlic turn yellow-golden then add sliced chicken breast in the wok.
    3. Continuing stir fry until the chicken is no longer in pink color.
    4. Add low sodium chicken broth and soy sauce.
    5. Once the broth is boiling add baby bok choy and shiitake mushroom. Keep cooking for a few minutes then add cooked soba noodles and green onion, let the soup boils for a couple of minutes. Turn the stove off. Then it's ready to serve. You can put the chopped green onion as a topping. Add chili powder, fish sauce, lime juice and taste it as how you like.
