Thai Style Spicy Lemongrass Grilled Chicken is an easy grilling recipe for Thai style chicken
I just recently discovered how easy it is to make a killer grilled chicken on a budget. You can get chicken hindquarters for very cheap, especially if you find them in the clearance section as I did. From there you just make a marinade using our healthy recipe for spicy lemongrass sauce and marinate and grill. Save back a little of the sauce to pour over the chicken once you have grilled it and you're pretty much done.
Preparing the Marinade
For the marinade we just used a sauce/dressing we have used for several other recipes. You can even just make this sauce and dip bread in it, it's so good. We made about 3-4 servings of it so you will just multiply x 3 or 4 to be safe and you should have enough to dip away. Once you have made it you will want to save at least ¼th of it back in a bowl to top the chicken with. Here is the recipe for the lemongrass dressing, it says spicy but just adjust the number of Thai peppers to increase or decrease the spice level.
Marinating the chicken
Whenever I marinate meat I like to poke holes in it to help the marinade permeate the meat better. You can just place the meat in a bowl and cover it thoroughly with the marinade like this.
You could also put it in a large ziplock bag to get better surface area coverage of the marinade and then shake it well for better coverage like this. Either way, plut it in the refrigerator for 30 minutes to overnight for better flavor.
Modifying for health
I used hind-quarters because they were like a couple of dollars for four but you could use any meat you wanted. Fish is probably the healthiest option, although, chicken breast has more protein per ounce than just about anything. You can always modify the marinade as well but this recipe is so simple there really isn't much more to rehab in this recipe.
Grilling Technique
I don't think grilling is my forte, so I brought reinforcements that have more experience in this. My neighbors have both photography and blogging experience and also grilling know how. It made for a fun way to get to know my neighbors and also learn a few things over dinner. For this, we started by covering the grill with foil for hygiene and heated the gas grill to high heat. My neighbor explained that this sort of seers the outside of the chicken so that the juices are trapped inside, meaning it will be juicier. After getting the outside cooked I turned it down to about medium-low heat and cooked for another 30 minutes more or less. You can use an internal thermometer, of course, to see that the internal temperature reaches 165 degrees F if you want to be safe.
Ingredients:
- Thai lemongrass sauce x 4, see recipe
- 4 Chicken hind-quarters or whatever meat you eat
Instructions:
- Poke holes in the meat and marinate 30 minutes to overnight in the fridge saving back ¼th to half the marinade for topping and dipping.
- Grill on high, flipping until slightly blackened.
- Turn down the heat and grill another 30 minutes or until cooked at 165 F internally and no longer pink inside.
- Serve on a plate basted with the sauce as a topping on the side.
- Serve with fruits or vegetables as a wholesome food summer treat!
