Easy Thai Stir-Fried Pork Liver
Thai stir-fried pork liver is a dish that Mod craves occasionally and actually has some decent health benefits. Praise be to Mod for this recipe, I came home and she was cooking it for herself and I grabbed a few photos and the instructions real fast. She wasn't planning on posting it, that's actually how this whole blog started. I wanted to capture all her knowledge from Thailand, especially as she rehabbed her recipes to be healthier using the healthier ingredients we keep.
Some health benefits
It is obviously high in iron and other key nutrients we need. Women, may especially crave it due to the loss of iron from menstruation. You might also want to consider liver for eye health, Alzheimer's disease, and inflammation. It also has a lot of vitamins like vitamin A and the B vitamins. It helps with the production of collagen which is good for hair, bones, joints, skin, and nails.
Some health precautions
Some reasons this one might not be healthy for you is if you are watching your saturated fat intake. Organ meats, in general, are higher in saturated fats and they also contain purine which could cause gout flare-ups if you have gout. Don't let the word fried, in stir-fried, scare you away from this recipe though. We use mono-unsaturated oils like canola oil which is often used in Thai food. You can also limit the amount of oil you use or use something like olive oil if it makes you more comfortable. Ingredients:
- 1 lb. pork liver
- Marinade
- 5-6 chopped garlic cloves
- 2 tablespoon low sodium soy sauce
- ½ tsp black pepper
- 2 tablespoon olive oil
Instructions:
- Chop the liver into bite-sized pieces.
- In another bowl mix the marinade ingredients to make the marinade and pour over the pork liver.
- Cover and let marinate for 15-30 minutes in the refrigerator.
- Drizzle the oil in a wok and heat to medium-high.
- Add in the meat to the wok and stir fry for about 5-10 minutes or until cooked to your liking.
- Serve as finger food or with a side like brown rice and vegetables.

I am eager to try this recipe with the farm raised pork I have! Could I cook vegetables in the same pan with the pork? Which would I add first?

Yes, you can. Cook the pork first then the vegatables later.
