Copycat Starbucks Sous Vide Egg Bites: Egg White & Red Spicy Thai Pepper Modifications
Copycat Starbucks Sous Vide Egg Bites are a way I found to get a good dose of protein with more spice and without the cost. The Egg White and Red Pepper ones are the ones I have bought before but the cost is so high. They also don't fill me up so I figured this is one I could modify to my taste and budget.
This is an easy recipe. I used only lean, high protein ingredients and you can adjust the spice level from, barely taste it too, Holy $#@%, what have I done!? You only need 4 ingredients and a muffin pan. I wasn't able to achieve the same beautiful, toasted and rounded top look. When I flip them to look rounded like they are at Starbucks the greens and reds were missing. Seems they float to the top during baking. We copied the idea from Starbucks, but everything is modified, so it isn't supposed to be a carbon copy on this one. If your an ovo-vegetarian, my buddy recommends cashew cheese as a non-dairy substitute.
Funny thing that happened, a cautionary tale
You might also want to use gloves when handling the Thai peppers. After I prepared them and put them in the oven I used the bathroom and had to take a shower afterward to kill the pain. Make sure you wash your hands very well at the very least if you cut the peppers with scissors as I did. I added a quarter to a half more finely sliced Thai pepper to the bottom of the tin for the mega spicy version. You could go for a full one if you're like my wife, she can eat raw Thai peppers as you would eat an apple.
Ingredients:
- 3 cups egg whites
- 1 cup fat-free cottage cheese
- ¼ cup sliced red Thai peppers or cut with small scissors as I did
- 1 cup finely sliced green onions, cilantro or baby spinach
Instructions:
- Blend all the ingredients for a minute or two until blended.
- Heat oven to 325 on bake mode.
- Place the egg white mixture in the muffin molds.
- Place muffin tin on the middle or bottom rack of the oven.
- Bake for 20-30 minutes, depending on how big your muffin tin is, or until brown on top and cooked through.
- Serve warm.
