3 Ingredient Persimmon Smoothie
This 3 ingredient persimmon smoothie recipe is a very simple way to make a delicious smoothie out of this curious orange fruit grown in North America and Japan but found globally. It has protein, carbohydrates and key nutrients and only takes a few moments to make.
It is February and these curious little fruits are showing up in supermarkets. I love going to the Asian market because every time I go there is a new little adventure waiting to be had. Growing up we had wild persimmons on trees around my grandpa's farm. These are different, they are similar in color and shape but I find them much more palatable, like so many fruits grown consumption. You have to remember that when farmers cultivate a fruit they aid natural selection by growing the ones that taste better. That is why most apples are so different than the original cider apples, the tartness was breed out of them very intentionally.
My Recipe
My recipe is super simple. I just use one large persimmon sliced with the skin left on, (there are lots of nutrients there). According to this website, healthybenefitsofeating.com it has the following important nutrients.
Fuyu persimmon contains vitamin C, an anti-oxidant which assists the body to fight off infectious diseases as well as free radical invasion. There are other vitamins such as B-complex, folate and thiamin. Minerals in Fuyu persimmon include manganese, copper, phosphrous and potassium. Manganese combines with enzyme superoxide dismutase to fight free radicals while copper is another co-factor with important body enzymes such as cytochrome. Copper is useful in red blood cells production.
We also used Greek yogurt because it helps maintain healthy gut flora with its probiotics. We used a simple vanilla flavored whey protein powder, calculating the amount of protein for my body weight using this formula.
Calculating your Protein
When I took nutrition for sport and fitness as part of my bachelor's degree the formula was 1.4-1.8 grams of protein/ kilogram of body weight. You will have to have some protein powder, whey is the most absorb-able by the body. Quickly convert pounds to kilograms at this site to calculate how much you weigh in kilograms. Remember that that is the amount of protein per day. This means you have to account for the protein you have or will be consuming the rest of the day.
Based on the amount I eat and how often I lift weights, today I decided to just go with 1 scoop of protein powder which equals 21 grams of protein. Based on a book I just finished yesterday, I may be overdoing it on my kidneys with the protein. You really have to be working out seriously to go all in on the protein. Animal-based protein is especially are especially hard on the body according to Dr. Neal Barnard, who wrote the book. At continuing ed course for physical therapy, a dietician recommends whey protein though and this is animal-based. Maybe someday we will figure this out. Reddit has been my go-to place for questions like this lately and I posed the question. Here is the link, in case you want to join in.
More on Persimmons
Persimmons grow in Japan and North America but are found around the world with globalization. You will see them more often at Asian markets and in Thai cuisine with especially strong demand from the Asian markets. One weird thing you might not know is that you should not eat them on an empty stomach or in large quantities. Horses sometimes find them wild in the pasture and get ill from eating too many of them. For more check out the wiki site on them.
