Thai Chili-Lime Steak is just something i figured out when a friend wanted steak. I love the combination of Thai peppers and lime and found a marinade to make it work. I used the same technique you use for making fajitas, which keeps it really simple and easy.
Choosing the Steak
I try to use a lean cut of meat like a round eye or flank steak, with the fat trimmed. I know flank steak is commonly used for fajita style grilling, not sure about round eye but I don’t know why not. You can also use skirt steak, rump or whatever you like if you are less concerned about the fat. The leaner cuts will be tougher so you will want to cook them more rare if you go for them.
The Marinade
First you will want to make the marinade. I used healthier ingredients as usual for the marinade as well, if you have any suggestions, I’d love to hear them. As usual with marinading, you can go for 5 minutes to overnight with the meat in the fridge.I like overnight covered with plastic wrap, not sure how much it really matters but it sounds better. The recipe I learned And adapted from only calls for 5 minutes, so you’re probably good to go either way.
Cooking the Thai Chili-Lime Steak
You can cook the the steak on the grill or just pan sear it in a cast iron skillet for nice, charred edges. Just heat your grill, wok or cast iron skillet or whatever, to searing, smoking heat. Sear the edges and then turn down the heat and cook to the degree you like your steak, leaner meats, more rare, again so they are not tough.
Finishing
Serve the Thai Chili-Lime Steak drizzled with thinly sliced lime wedges and sprinkled with a little dried Thai chili pepper. If you don’t have dried Thai chili pepper you can use black pepper, crushed red pepper or whatever does it for you. Equipment
- Grill or Cast Iron Skillet
- Blender or Food Processor
Ingredients
Marinade
- 2 tablespoon Lime zest
- 2 tablespoon soy sauce Light
- 3 tablespoon Garlic
- 2 tablespoon Garlic Chili Sauce
- ½ Cup Canola Oil
Steak
- 1 Pound Flank Steak
Toppings
- 6 Limes Cut into thin wedges
- 2 tablespoon Chili powder
Instructions
- Blend the marinade ingredients and place in large bowl
- Marinate the steak
- Grill first searing and then let rest for 5 minutes more or less
- Drizzle with lime juice and red Thai pepper and then serve garnished with lime wedges
