Three ingredient Thai curry with grilled chicken will save you time and get you your Thai food fix. I live by the same mindset Steve Jobs suggested in his quote.

A lot of recipes online live by the dogma that good food has to be time consuming. Why does it have to be? Part of a healthy lifestyle means a lot of working out. You get what you put into it. I look at Dwayn Johnson, The Rock, who is close to my age. He looks amazing and I want more time in the gym too. You can hold off the years with healthier eating and a lot of exercise.

I went to the asian market sure that I would find something to make it faster. The trick was figuring out what they call it. I found this Thai curry gravy. It is not a specific curry. I found this can just labeled curry gravy.

How I rehabed it to make it healthier
I used a whole grain rice and lean, white meat chicken and just flavored it with the sauce. The gravy itself has about 10% of your daily RDA of fat because of the coconut milk inside. There is also the issue of it being canned food. Until someone comes out with better versions you have to sacrifice if you want the speed.
Just use the gravy more sparingly unless you have restrictions or concerns. If that's the case you have to go with those and defer to other recipes. The best thing about this recipe is how just a little of the gravy can enhance whole grain and lean meat.
Grilled Chicken
Grilling can be one of the fastest and healthiest way to cook. The human race took a huge step forward when they figured out how to throw a bird on a fire. It kills the bacteria and makes the food taste better. We then figured out which pieces of the meat are heathy.
You just grill your chicken until your desired level and pull it apart with a fork. If you are even more pressed for time just grab a rotisserie chicken and pull it apart with a fork.
Healthy Rices

- 4 Grilled Chicken Breasts
- 1 Can of Carevelle Curry Gravy
- 1-2 cups Whole Grain, Not White, Rice
Instructions:
- Cook your rice in a rice cooker or with you might want to use a quick rice like Uncle Ben's microwavable 90 second rice.
- Leave the rice in the rice cooker on the keep warm setting or in a pot on low.
- Grill the chicken breasts and pull the chicken apart with a fork over a bed of rice.
- In a microwave safe bowl heat the curry gravy for 2 minutes or using a pot until simmering hot.
- Pour the gravy over the rice and chicken to your desired level of flavor. It is slightly spicy so make sure to taste it as you go. Going lighter on it is healthier anyways.
- Garnish with a sprig of cilantro for presentation if entertaining.
