3 Ingredient Baked Massaman Curry Salmon
Delicious and healthy Thai food need not break the bank and take forever to prepare. I am constantly looking for ways to save time and money. It occurred to me that with all the pre-made Indian sauces I bet I could also find a pre-made Thai curry sauce. My Thai wife didn't think I would find it at the Asian market. She was wrong, they have it. This simple and quick recipe delivers full Thai curry POW with only 3 ingredients.
Staying on Budget
The salmon was only about $6 for 2 pounds. The can of Aroy-D retails for just under $2/ can. Thai peppers are also super cheap at just a dollar or two for a small bag of them.
Spicing it up
If you go to a Thai restaurant they often ask what spice level you prefer from 1-5. 1 being barely any spice and 5 being a hell of a lot of spice. It doesn't take much to really spice things up when it comes to Thai peppers. For simplicity sake here I am going to say the number of peppers will correspond to the heat level. I like to use scissors and cut my peppers over the dish before cooking it.
Health concerns to be mindful of with this recipe
Any time you use a canned item for the convenience of it you add a lot of sodium. The Aroy-D adds 18% of your RDA of sodium per each serving of this recipe. If you are on a low sodium diet you might just want to be aware of this. You also want to not eat large fish too many times per week. Large deep sea fish often have elevated mercury due to bio-magnification. It is also higher in healthy fats and is generally one of the best choices you can make. You just want to make sure to space it out.
Ingredients
- 1 can Aroy-D Massaman Curry- Click here to buy it from my Amazon Store.
- four .25 lb. fillets of salmon
- 2-6 Thai peppers
Directions
- Preheat an oven to 375 degrees F.
- Place 4 salmon fillets in a casserole pan.
- Cut 1-2 Thai peppers into small slices evenly over the fillets.
- Cover the fillets evenly with can of massaman curry.
- Cut up to 3 more Thai peppers over the top of this.
- Cook for 15-20 minutes or until cooked through.
- Serve with a spatula
