Minchita's Baked Pork in Thai Coconut Sauce
Grilled or baked pork is a typical street food in Thailand. It is the way the pork is scored and marinated that is great about this recipe. You can grill or bake this recipe. Normally you will find this recipe grilled but due to the thickness our friend, Minchita baked this recipe. Minchita said this is one of the dishes she is famous for. She makes it regularly. She doesn't actually measure, she just knows how much of ingredient to add. This is her rough estimate.
Recipe
Ingredients
- ⅔ can lite coconut milk
- 2 and ½ tablespoon of oyster sauce
- 1 ½ tablespoon of light soy sauce
- 1 ½ tablespoon sweet black soy sauce (see iew dum)
- 1 ½ heaping tablespoon stevia brown sugar
- 1 pinch of salt or salt substitute
- 1 teaspoon minced garlic
- 1 cup chopped cilantro, stem and root if it's available for the bitterness but of not the whole plant will do. When you use the root, one root is enough and the other parts can be used as garnish.
- 4 medium (she recommends Trader Joe's French cut, bone in pork chops) (The one in our picture is not from Trader Joe's)
Instructions
- Score the pork with a fork on the front and on the back.
- Place in a mixing bowl and add cilantro, minced garlic, stevia brown sugar, low sodium soy sauce, black sweet soy sauce (see iew dum), oyster sauce and coconut milk.
- Add a splash of fish sauce.
- If you want to grill this you will add 1 egg as well to hold the sauce together. If you bake it the egg doesn't work as well.
- Massage the marinade into the meat.
- Marinate/ rest in the refrigerator for at least an hour or up to a day ideally.
- Turn the oven to bake at 400 degrees. It's better at 450 degrees in a toaster oven if you have one.
- If you use the regular oven, once you see the bubbles and it looks cooked turn the oven to broil and cook another 5 minutes to broil just to brown it a little.
