Massaman Curry Fried Rice
Massaman Curry Fried Rice is something I came up with on the fly. Sometimes I just look in our pantry at what we have to work with. You just need a large wok and the following ingredients listed in the recipe below.

You can make this in 15 to 20 minutes and use the bagged 90-second microwave rice even to make it easier. You can use a store-bought massaman curry paste or make your own using our recipe to maintain a fresher, non-processed approach.
Making your own massaman curry paste
You will need to follow this recipe if you decide to make your own curry paste. The oils will be fresher and more fragrant but it is significantly more work.
Massaman Curry Fried Rice
Equipment
- Large Wok
Ingredients
- 2 tablespoon canola oil
- 2 cups Wild Rice Pre-cooked
- 2 tablespoon Massaman Curry Paste
- 2 Egg Whites
- 1 cup Light coconut milk
- 2 tbsp garlic chopped
- ½ cup green onion chopped
- 3 Thai peppers chopped
- 1 lb chicken breasts chopped into bite sized pieces
Instructions
- Heat the oil in the wok on medium high heat until it smokes.
- Add the peppers, garlic and stir-fry for about 30 seconds.
- Add the massaman curry paste and stir-fry in with the garlic until fragrant.
- Add the chopped chicken breast and stir-fry in until opaque.
- Add the coconut milk and mix in, reducing the sauce until it's mostly evaporated out.
- Add the rice and mix in well.
- When the rice mixture is solidified enough, push it to the side and add the egg whites to the exposed surface of the wok and stir -fry until solid.
- Mix the egg into the mixture and add in the green onions and stir-fry another minute.
- Serve with a garlic-chili paste, lime, cilantro and Thai chilis for color.
