Loquat Coconut Refresher Recipe
Loquat coconut refresher is a recipe I invented to take advantage of the loquat trees we have growing at our apartment. You can mix them with just 3 ingredients for a cool healthy drink and add rum to make a tropical mixed drink.
Loquats
Loquats are a tropical and subtropical fruit. They are originally from China but started making their way around the rest of the tropical and subtropical world about 1000 years ago. They are somewhat similar to apricots in color and texture and have fuzzy skin occasionally. The orangish-yellow ones are sweet and the greener ones are more tart. The sweetness isn't as strong as in other fruits, which is why it probably isn't a well-known fruit. This is easily remedied with a little low-calorie stevia. I like the pulpy texture and think it goes well with coconut water with coconut meat and a big straw.
Ingredients:
- 1 cup seeded and washed loquats
- 2 cups coconut water with pulp
- 1 tablespoon stevia
- 1 cup ice
- Optionally add a shot of rum to make it alcoholic
Instructions:
