Pickled Eggs with Thai Peppers -- Adam Shed
I love pickled eggs but they are way too expensive. I see them regularly at gas stations as I go back and forth to work at $8 for a regular sized jar. Eggs themselves are really very cheap and so are the vinegar and peppers. The effort isn't so bad either if you multitask like I did and boil the eggs while doing laundry, washing dishes or writing a blog post.
I can eat a jar of pickled eggs really fast so for this recipe I used a large pickle jar. You can get these at most supermarkets in the US for a reasonable price in the bulk section. I was able to fit 4 dozen regular sized chicken eggs into the jar and have just enough room for the vinegar, Thai peppers and garlic.
Boiling the vinegar and herbs
In order to be safe you will want to boil your vinegar and herb/pepper mixture before putting it on top of your eggs. You will want to do this first if you want to layer the peppers between the eggs.
Boiling the eggs
I boiled 1 pot of eggs and then put a handful of garlic and Thai peppers on top of each layer of eggs. I was able to do about 12 eggs per pot. You will want to place the eggs 1 layer deep with an inch or two of water over them. Bring them to a boil and boil for about 10 minutes. I then shelled them under cold water so as not to burn myself.
Creating a beautiful jar of eggs that can serve as a gift
When I made my eggs I payed attention to how the jar would look in the end. As mentioned above, I put a layer of boiled eggs and then a layer of peppers and garlic cloves. If you repeat that it ends up looking pretty delicious.
Health Concerns with Egg Yolks
When I worked at the hospital I remember seeing a sign that stated that an egg yolk has 106% of the RDA of cholesterol for a person. This made quite an impression on me as someone with high blood pressure which my doctor thinks is mainly from anxiety. I personally am not as sure about it being all because of anxiety because I have had my fair share of pizza. Athlerosclerosis is what I think could be causing at least some of it. Athlerosclerosis is the condition in which inflammation and cholesterol adhere to vessel walls and increase the incidence of stroke and heart disease. That's why I am leery of eating anything with high cholesterol content.
Personally, when I eat these I will probably throw away most of the yolks away but there is some new evidence that egg yolks DO have some benefits. In the post she noted this article on how egg yolks can raise the good cholesterol. She also noted that the FDA is no longer warning against eating cholesterol the way they used to. This is good news for those who find my aversion to egg yolks annoying. 🙂 As always, if you have concerns about certain ingredients follow up with your doctor. Our Recipe
Ingredients:
- 4 dozen medium sized boiled chicken eggs
- ½-1 cup of Thai peppers, the more colorful the better green and red especially if you intend to give them away as Christmas gifts
- ½ liter of distilled white vinegar
- 2 cloves of garlic separated
- 1 tablespoon salt
- Optionally- I found this blazing hot "piquin" pickled pepper mix I poured over the top of the mixture once I finished everything else to add some extra heat.
Instructions:
- Bring the vinegar with the peppers, garlic and salt to a boil and set aside.
- Boil about 12 eggs at a time for about 10-12 minutes and then shell under cold water and place in a layer in your jar.
- Place some of the Thai peppers and garlic cloves on top of each layer of eggs and repeat until the jar is 90-95% full.
- I topped the jar off with some more red Thai peppers and the optional jar of Piquin pickled pepper mentioned in the ingredients above for extra spice.
- Pour the vinegar mixture over the top, put the lid on and refrigerate for 2 days to 2 weeks.
- Give the jars out as gifts or serve as a side, an appetizer or for a snack with the Thai peppers for garnish.
