Thai Green Curry Spaghetti
Thai Green Curry Spaghetti is a compromise between my craving for spaghetti and my husband's constant craving for Thai flavors. I make spaghetti regularly as one of my favorite recipes and I added some Thai flavors to satisfy him for when he feels like it's too boring. Green curry is one of the top recipes you will find in Thai food.
Thai Green Curry
The green color comes from all the Thai spices and peppers and you can make the paste from scratch. We have bought heat and eat dinners from brands like lean cuisine which just call themselves lean because of the small portions. We feel like this is unrealistic for someone that works out according to current guidelines and we go in for healthier ingredients and bigger portion sizes.
TV dinner makers like lean cuisine use simple, refined wheat flour and battered and fried protein. In large portions, this is not impressive to us at all and looks a lot like lip just naming something healthy assuming it's all someone will eat and that they know that. That's not ideal so we try to make our own ingredients when possible. That said, you can buy premade green curry paste for speed. Restaurants actually usually just use something like this Mae Ploy green curry paste. Here is our green curry paste recipe so you can make it yourself and know what you are eating.
Reducing the Glycemix Index Score
For the noodles, we try to always use whole grain noodles, which are now available pretty much anywhere and give more color and texture in our opinion. In case you don't already know, the difference is the rate at which the sugars are released into your bloodstream. When you have whole grain flours they have a lower glycemic index. The glycemic index is the score for which the flour is converted into blood sugar.
Other Modifications
We always go for as many lower sodium options as possible in our recipes. If you can find lower sodium fish sauce and soy sauce etc. grab them up. They are sometimes hard to find but will slow the progress of heart disease if you can make them an automatic part of your behavior. Of course, you can always modify further if you are vegan or something doesn't sound tasty enough for your specific tastes. There are also gluten free noodles available if you go gluten free. Without further ado, here is the recipe.
Ingredients:
- 5 cups of cooked whole grain spaghetti
- 4 tablespoon green curry paste
- 2 tablespoon olive oil
- 1 tablespoon brown sugar
- 1 ½ fish sauce
- 1.5 lb chicken breast sliced
- 1 ½ cup red/orange bell pepper
- 2 cups zucchini
- 1 ½ cup of coconut milk
- 1 ½ cup basil leaves
Instructions:
4. Continuing on stir fry until the vegetables are cooked. Turn off the stove and serve while it's hot.

- Heat olive oil <g class="gr_ gr_110 gr-alert gr_spell gr_inline_cards gr_disable_anim_appear ContextualSpelling ins-del" id="110" data-gr-id="110">on</g> a large wok on high heat then add green curry paste and stir fry until you smell the aroma but don't let it burns.
- Add 1 cup of lite coconut milk and sliced chicken breast. Stir the chicken in the curry until it's cooked.
- Add cooked spaghetti, red/orange bell pepper, and zucchini; stir fry everything together for few minutes then season with fish sauce, brown sugar, and basil leaves.
- Continuing on stir fry until the vegetables are cooked. Turn off the stove and serve while it's hot.
