Eggplant Thai Basil
Ingredients:
- 1 large sliced eggplant
- 1 large chopped onion
- 1 chopped bell pepper
- 1 lb sliced chicken breast or comparable protein
- 1 tablespoon of olive oil
- 2 teaspoon soy sauce
- 100 g of Por Kwan chili paste with Holy Basil leaves
- (Or just use regular Thai chili paste, like sambal)
- I know that some of you guys may question why I choose to use a chili paste not fresh ingredients like fresh basil leaves or fresh garlic or Thai chili. The reason is that for some people like me who live far away from an Asian market, the chili paste is another option that you can buy and store it in your pantry for a while and you do not have to worry about getting the ingredients to make Thai basil dish. You can also order it from Amazon by clicking the ad bar on the side of the page and support our page. I promise that I will post a version of Thai Basil with all the fresh ingredients.

1. Clean and chop the eggplant, peppers, onions and slice chicken breast and place on a plate.
2. Oil the pan and cook the chicken or other protein on high
3. Add the vegetables Por Kwan chili paste and soy sauce and stir until the vegetables are cooked.
