    Yellow Curry Chicken (แกงเหลืองไก่)

     Yellow Curry Chicken (Tofu, or other lean protein)

    Yellow Curry is one of the most requested items at any Thai Restaurant.  Here is a simple way to do it.

    Ingredients:

    • 2 Medium Potatoes cubed into small cubes
    • 1 Medium yellow onion sliced in 1 inch slices
    • About 1 pound of chicken (or other protein) chopped into bit sized pieces
    • 2 Tablespoons of olive oil
    • 4 Tablespoons of yellow curry paste
    • 3 Cups of coconut milk

    Directions:

    1. Heat the oil in a large skillet or wok.
    2. Add the curry paste and stir fry until it is all very hot.
    3. Add the chicken (protein of choice) and 2 cups of coconut milk and stir until boiling.
    4. Once it is boiling add potatoes and onions and another cup of coconut milk.
    5. Once boiling add 1 cup of water.
    6. Once the vegetables are soft it is ready to eat.

    You can Enjoy Yellow Curry Chicken (or protein of choice) by itself or with brown rice for a healthy side or some of the sides featured on this site.
