Yellow Curry Chicken (Tofu, or other lean protein)
Yellow Curry is one of the most requested items at any Thai Restaurant. Here is a simple way to do it.
Ingredients:
- 2 Medium Potatoes cubed into small cubes
- 1 Medium yellow onion sliced in 1 inch slices
- About 1 pound of chicken (or other protein) chopped into bit sized pieces
- 2 Tablespoons of olive oil
- 4 Tablespoons of yellow curry paste
- 3 Cups of coconut milk
Directions:
- Heat the oil in a large skillet or wok.
- Add the curry paste and stir fry until it is all very hot.
- Add the chicken (protein of choice) and 2 cups of coconut milk and stir until boiling.
- Once it is boiling add potatoes and onions and another cup of coconut milk.
- Once boiling add 1 cup of water.
- Once the vegetables are soft it is ready to eat.
You can Enjoy Yellow Curry Chicken (or protein of choice) by itself or with brown rice for a healthy side or some of the sides featured on this site.
