Scrambled Egg Whites and Tofu
This scrambled egg whites and tofu recipe probably made for one of the best mornings of my life. You only get so many days when you are not too old and not too young and get to wake up with a beautiful wife who makes you a healthy, delicious breakfast. Mod, my Thai wife, has random bouts of energy and inspiration. You can't expect or predict them, they just happen when they happen and this recipe is a result of one of them.
The idea for this recipe came from the book, Healthy Thai Cooking, by Sri Owens. That was just the idea though, Mod woke up and made this recipe from scratch, not
looking at the book at all.
Modifications you can make
This is, as always adjustable to your needs. You can leave out any of the seasonings that increase how processed the recipe is. The soft tofu we bought for this recipe from Jayone, comes with a seasoning package which is off the hook delicious. We found it at the Asian market, I think it's really common, I see it everywhere, the photo on the package appealed to me. Mod did the rest.
You just add a few more seasonings and, BOOM! Amazing breakfast! Now, It has to be said that Thailand is not like the US, in that they don't have a typical breakfast fare, according to my wife. She grew up eating pork chops for breakfast as opposed to how in the US we eat, eggs, bacon, sloppy fattening stuff. Not that pork chops are so much better. We have to understand how great the differences are between cultures to know that as a category I probably shouldn't even have breakfast foods here. That said, we are a fusion couple, living in the US with Western readers who eat eggs for breakfast.
Ingredients:
- 4 eggs white
- 4 whole eggs
- 1 package of soft tofu stew
- 1-2 tablespoon healthy oil like canola or olive oil
- 1 tablespoon Sriracha sauce
- ½ cup chopped green onions
- 1 lime sectioned
- Thai peppers, finely chopped to the desired level
Instructions:
- Heat oil on medium heat.
- Add eggs and cook until they start solidifying, stirring often.
- Add in the Sriracha sauce, tofu seasoning packet and tofu scrambling it into the mix.
- Once the eggs are cooked and seasonings are mixed in serve hot with the lime sections, chopped green onions and Thai peppers as a garnish.
