Thai Pok Pok Flatbread Pizza
Pizza is a go-to recipe for a carefree Friday night. We always go for thin crust flatbread and whole wheat if we can for the health benefits and taste. For this recipe, we made it a bit more gourmet by using the Thai inspired gourmet sausage made by Olympia Provisions. No longer made by this company.
I did a post using the sausage with stir-fried noodles which we posted a week ago. I like this one much better personally, but I'm always a sucker for pizza. My wife hit a home run by getting just the right ingredients to complement the sausage. The pizza has a very distinct Thai flavor that you know is for real because my Thai wife invented it. That is not always the case with Thai recipes. Last night we ate at Buffalo Wild Wings, and when my wife tasted their Thai curry wings, she said it tastes more like Indian curry. There is a significant difference, and I tasted it too.
Giving Pizza the Thai Flavor
We had a rather intense discussion on the phone trying to figure out the perfect ingredients to complement the Sai Ua sausage. Sai Ua sausage contains galanga, lemongrass, and Thai chili which are very much Thai food ingredients. It is a unique flavor profile that people of Northern Thailand grow up with and which feels like home.

We considered the consistency we would want to have and how spicy most people like their food. Mod struck down all my ideas of adding more galanga, lemongrass or bamboo shoots and this is what she came up with.
Ingredients:
- 1 whole grain flatbread pizza crust, (Target sells one that we always used under the brand Archer Farms)
- 10 garlic cloves
- ½ tablespoon olive oil
- 3 tablespoon organic garlic basil pizza sauce
- 1 Sai Ua sausage
- ½ teaspoon Sriracha sauce thinly sliced
- ½ bell pepper cut into bite sized pieces
- 6-8 fresh basil leaves
- 1 cup of shredded cheese
Directions:
- Heat the oven to 400 degrees
- Saute the garlic cloves, sausage, and bell pepper in the olive oil about 3 minutes
- Mix the pizza sauce with the Sriracha sauce
- Spread the pizza sauce on the crust evenly using a large spoon
- Sprinkle ½ of the cup of the cheese evenly on the pizza sauce
- Add the ingredients you sauteed earlier, and fresh basil leaves evenly across the pizza
- Sprinkle on the rest of the cheese evenly over the top of the pizza
- Cook for 10-12 minutes or until it reaches your desired level of darkness for the crust
- Slice into squares and serve. 🙂
What Makes it Healthier
Using ingredients like olive oil and whole grain crust are basics of healthier eating. Pork has gotten leaner over the past few decades although it may not be the best choice for everyone. You can use a reduced fat cheese if you please. PLEASE fill us in on any other suggestions you have to further improve the healthy qualities of this dish.
