    Super Easy Healthy Thai Fried Rice (ข้าวผัดจานด่วน)

    Super Easy Healthy Thai Fried Rice

    Ingredients:

    • 4 cups of whole grain rice, your preference.  We are planning to do a category of types of rice, there are lots of wonderful types of whole grain rice available at stores like Whole Foods
    • 4-6 cloves of garlic
    • 3 tablespoons of a healthy oil like olive oil
    • 1-cups sliced lean protein of choice
    • 2-4 eggs worth of egg whites
    • Vegetables such as sliced/diced; ½ small bundle cilantro, 1 spears sliced celery, 1-2 carrots, ½ onions, 4-5 Thai peppers
    • 3 tablespoons fish sauce
    • 1 tablespoon oyster sauce
    • 1 Artistically sliced cucumber, limes for garnish

    Directions

    1. Heat oil on medium high for a  few minutes
    2. Add the garlic cloves and brown
    3. Add the protein and saute
    4. Add the vegetables and mix in
    5. Make a hole in the mix in the middle of the wok and add the egg whites and scramble
    6. Add the whole grain rice stir a few more minutes and add the oyster sauce and fish sauce
    7. Serve garnished with sliced cucumber, lime and Thai peppers for color
