Ginger Soba Noodles Soup

- 8 oz soba noodles cooked
- 12 oz chicken breast sliced
- 16 oz baby bok choy or bok choy
- 8 oz shiitake mushroom sliced
- 64 oz low sodium chicken broth
- 5 cloves garlic minced
- 2 tablespoon fresh ginger minced
- 4 tablespoon green onion chopped
- 2 tablespoon olive oil
- 3 tablespoon low sodium soy sauce
Heat olive oil in a large wok then add ginger and garlic.
Stir fry until the ginger and garlic turn yellow-golden then add sliced chicken breast in the wok.
Continuing stir fry until the chicken is no longer in pink color.
Add low sodium chicken broth and soy sauce.
Once the broth is boiling add baby bok choy and shiitake mushroom. Keep cooking for a few minutes then add cooked soba noodles and green onion, let the soup boils for a couple of minutes. Turn the stove off. Then it's ready to serve. You can put the chopped green onion as a topping. Add chili powder, fish sauce, lime juice and taste it as how you like.
