Ingredients

  • 8 oz soba noodles cooked
  • 12 oz chicken breast sliced
  • 16 oz baby bok choy or bok choy
  • 8 oz shiitake mushroom sliced
  • 64 oz low sodium chicken broth
  • 5 cloves garlic minced
  • 2 tablespoon fresh ginger minced
  • 4 tablespoon green onion chopped
  • 2 tablespoon olive oil
  • 3 tablespoon low sodium soy sauce

Instructions

  • Heat olive oil in a large wok then add ginger and garlic.
  • Stir fry until the ginger and garlic turn yellow-golden then add sliced chicken breast in the wok.
  • Continuing stir fry until the chicken is no longer in pink color.
  • Add low sodium chicken broth and soy sauce.
  • Once the broth is boiling add baby bok choy and shiitake mushroom. Keep cooking for a few minutes then add cooked soba noodles and green onion, let the soup boils for a couple of minutes. Turn the stove off. Then it's ready to serve. You can put the chopped green onion as a topping. Add chili powder, fish sauce, lime juice and taste it as how you like.
