Thai Mom's Easy Thai Red Curry with Pork Balls: A Delicious and Nutritious Dish

Equipment

  • 1 Large Wok Skillet or Pot

Ingredients

  • 1 kg. Pork balls sliced
  • 1000 ml. Coconut milk 2 500 ml boxes
  • 200 grams Red curry paste
  • ½ cup Thai eggplant Sliced into wedges
  • 1 cup Thai basil Or regular basil
  • 5 Thai peppers Sliced and seeded if you want less heat
  • 650 Ml. Water
  • 2 tablespoon Fish sauce
  • ½ tablespoon Stevia Or one tablespoon sugar

Instructions

  • 1. Set a pot with half a box of coconut milk.
  • 2. Add red curry paste and stir fry until fragrant.
  • 3. Add meatballs and stir together, add 1 more box of coconut milk until the coconut milk boils
  • 4. Add water and wait for it to boil. Add the eggplant to cover the lid for 10 minutes. The eggplant is cooked.
  • 5. Add Jinda red pepper and basil leaves. Season with fish sauce and sugar. Ready to serve with Khanom Jeen or if you don't like it, you can use brown rice instead.
