Ingredients
1kg.Pork ballssliced
1000ml. Coconut milk 2 500 ml boxes
200gramsRed curry paste
½cupThai eggplantSliced into wedges
1cupThai basil Or regular basil
5Thai peppersSliced and seeded if you want less heat
650Ml. Water
2tablespoonFish sauce
½tablespoonSteviaOr one tablespoon sugar
Instructions
1. Set a pot with half a box of coconut milk.
2. Add red curry paste and stir fry until fragrant.
3. Add meatballs and stir together, add 1 more box of coconut milk until the coconut milk boils
4. Add water and wait for it to boil. Add the eggplant to cover the lid for 10 minutes. The eggplant is cooked.
5. Add Jinda red pepper and basil leaves. Season with fish sauce and sugar. Ready to serve with Khanom Jeen or if you don't like it, you can use brown rice instead.
