Thai Mom's Comforting Chicken and Rice Soup

Ingredients

  • 2 Cups Brown Rice
  • 3 Cups Chicken breasts Ground
  • 7 Cloves Garlic Crushed
  • 1 teaspoon Black pepper Ground black pepper is what she uses
  • 3 tablespoon Low sodium soy sauce
  • 3 tablespoon Canola Oil
  • 1 Cup Scallions
  • 1 Cup Cilantro
  • 1 teaspoon Salt Or salt substitute

Instructions

  • Mix chicken breast with 2 tablespoons of soy sauce, ½ teaspoon ground pepper, mix well and set aside.

  • Rinse the rice and strain, set aside.

  • Put 4 cups of water in a pot when the water boils. Bring the prepared rice to a boil (use low heat), stir until the rice begins to bloom or soften, add salt and the rest of soy sauce.

  • Boil the rice and add in the rest of the salt and soy sauce.
  • Heat a pan, wok, or skillet, on low heat until hot.

  • Add garlic and stir until fragrant, scoop out some, and set aside.

  • Add the chicken, garlic, and cilantro into the rice, taste, and season as needed.
