Hoy he hecho uno de mis viejos favoritos, la sopa de hierbas tailandesa. Es una receta ideal para calentar en cualquier momento, pero especialmente cuando hace fr\u00edo. La primera vez que prob\u00e9 la sopa fue en el restaurante tailand\u00e9s en el que trabajaba mi mujer, Banana Leaf, en Dallas. Esta receta est\u00e1 inspirada en su sopa y en otras que encontr\u00e9 en Internet, pero modificada con ingredientes m\u00e1s saludables y basada en los ingredientes que ten\u00edamos.<\/p>\n<h2>Una sopa baja en calor\u00edas<\/h2>\n<p>Hace varios a\u00f1os estaba viendo Scientific American, la serie de televisi\u00f3n, y vi a Alan Alda entrevistando a investigadores que estaban estudiando las dietas de calor\u00edas restringidas y sus efectos en la longevidad. Ya hab\u00eda le\u00eddo sobre la investigaci\u00f3n, pero nunca me hab\u00eda convencido. Alan Alda me convenci\u00f3, no pude encontrar el video exacto pero encontr\u00e9 <a href=\"https:\/\/www.youtube.com\/watch?v=9jvqNG1g62Y\" target=\"_blank\" rel=\"noopener\">este video de Alan Alda sobre el tema por si quieres verlo<\/a>. Tambi\u00e9n empec\u00e9 mi propia serie de v\u00eddeos al respecto y la ir\u00e9 ampliando cuando descubra herramientas que me ayuden. Los dos \u00faltimos a\u00f1os me ha costado m\u00e1s desde que Swanson dej\u00f3 de fabricar su caldo convenientemente envasado o yo al menos dej\u00e9 de encontrarlo. Mi plan es hacer una gran tanda de esta sopa y llev\u00e1rmela al trabajo en un recipiente para sopa, para que me sirva de ayuda para resistirme a la comida r\u00e1pida.<\/p>\n<h2>Mi versi\u00f3n de la sopa de hierbas tailandesa<\/h2>\n<p>Esta sopa puede hacerse vegetariana si se desea, simplemente dejando de lado la salsa de pescado y utilizando un caldo de verduras. Personalmente he utilizado un caldo de pollo de corral bajo en sodio para hacerlo un poco m\u00e1s saludable. Tambi\u00e9n puedes utilizar pr\u00e1cticamente cualquier verdura que tengas. Normalmente tenemos a mano pimientos tailandeses, albahaca, ajo picado y espinacas tiernas, as\u00ed que los utilic\u00e9. Usa lo que tengas, por supuesto, y un jalape\u00f1o picado ser\u00e1 suficiente si no tienes pimientos tailandeses.<\/p>\n<h4>Ingredientes:<\/h4>\n<ul>\n<li>1 cucharadita de aceite de oliva<\/li>\n<li>1 pizca de pimienta<\/li>\n<li>\u2153 de taza de zumo de lima<\/li>\n<li>4 cucharadas de ajo picado<\/li>\n<li>4 champi\u00f1ones peque\u00f1os picados<\/li>\n<li>8 tazas de caldo bajo en sodio<\/li>\n<li>\u00bd taza de cilantro<\/li>\n<li>\u00bd taza de albahaca o albahaca tailandesa<\/li>\n<li>2 cucharadas de estevia<\/li>\n<li>\u00bd taza de espinacas tiernas (opcional)<\/li>\n<li>Salsa de pescado baja en sodio y o salsa de soja al gusto<\/li>\n<\/ul>\n<h4>Direcciones:<\/h4>\n<ol>\n<li>  Poner el aceite de oliva en una sart\u00e9n y saltear el ajo, los pimientos y las setas.<\/li>\n<li>  A\u00f1adir el caldo y cocer a fuego lento durante 16 minutos.<\/li>\n<li>  A\u00f1ade la stevia y cocina a fuego lento durante 15 minutos m\u00e1s.<\/li>\n<li>  Ponga el quemador a fuego lento y sirva con las hierbas a un lado si quiere disfrutar de la sopa como lo hacen en los restaurantes de Pho o, de lo contrario, simplemente a\u00f1\u00e1dalo.\n<p><div
