Ingredients
  • • 3 lbs. eye of round.
  • • 1 tbsp kosher salt.
  • • 1 cup finely sliced lemon grass.
  • • ¼ cup red hot chili oil.
  • • ½ cup extra virgin olive oil to oil the cooking sheet and meat.
Instructions
  1. Preheat oven to 350 degrees.
  2. Sprinkle oil over the cooking sheet and meat.
  3. Sprinkle salt across the whole roast until well covered.
  4. Rub the roast with the chili oil until the whole thing is well covered.
  5. Sprinkle the lemongrass on top until well covered.
  6. Place in the oven using the guidelines below to your desired level, about 2 hours for medium well done but you can use an inexpensive cooking thermometer from your local grocery store
Notes
Rare: 120 - 130 degrees - bright purple red, tender, juicy
Medium Rare: 130-135 degrees - bright red, warm, tender very juicy
Medium: 135 -145 degrees - rich pink, slightly juicy
Medium well: 145 - 155 degrees - tan with slight pink, firm, slight juice
Well Done: 155 and above - tan to brown, very little juice, meat can become tough
