Stir-Fried Cabbage Noodles
Stir-fried cabbage and noodles are a fun way to get your roughage with a little more flavor. As I am writing this it is January 1st, New Years day. My home health patients have been reminding me to eat my cabbage and black-eyed peas. I went and bought a cabbage before they sold out and brainstormed a bit with my wife before she came up with this quick recipe. This is a recipe you can do very easily and quickly but that will get eaten. It is delicious.
Modifications
My wife Mod, didn't MODify this too much to rehab it to be healthier but you could easily swap out a few ingredients. You could use a whole grain noodle instead of egg noodles. You could also use a sauce lower in sugar. As always you can use your protein of choice. We have been eating a lot of fish tofu lately because it is easy and delicious and we are never caught up with everything we need to do. Easy is always good!
Ingredients
- 2 bundles dried egg noodles
- ½ cabbages
- 16 oz. fish tofu
- 5 chopped garlic cloves
- 3 tablespoon olive oil
- 2 teaspoon soy sauce
- 4-5 tablespoon Cantonese Suki sauce
Instruction
1. Soak dried egg noodles in cold water for 10 minutes and drain the water out.
2. Heat olive oil in a wok at high heat then add chopped garlic to the wok.
3. Add cabbages to the wok when the garlic turns to golden color.
4. Add 1 teaspoon soy sauce and stir-fried until the cabbages slightly turn to transparent.
5. Add egg noodles and fish tofu and follow with another teaspoon of soy sauce and Cantonese Suki sauce.
6. Stir-fry until the egg noodles are soft.
